Pear Apple Crumble… yummy!

Made some delish Pear Apple Crumble last week.  It was supposed to be be Pear Crumble but we didn’t have enough pears so apples made there way into the flavor party.  Oopsy.  a pleasant surprise  it was indeed!


I wanted to bake something for Jakeums because it was the first time in what seems like a lifetime that I had some time off.  I love cooking…but never have the time.  This recipe was a cinch, and my “freestyle cooking” was a great addition to a yummy recipe.

1/2 cups old-fashioned rolled oats
1/2 cup packed brown sugar
1/3 cup oat flour
1/2 teaspoon ground cinnamon (We love Penzy’s spices over on Hennepin!!!)
2 tablespoons canola oil

3  ripe but firm  pears, peeled and cut into 1/4-inch pieces
1/4 cup water
tablespoon fresh grated ginger
1 tablespoons all-purpose flour
1/2 freshly squeezed lemon juice
2 Fuji apples, sliced into 1/4-inch pieces

1. Preheat oven to 350°F.

2.  Prepare topping ingredients  in a medium bowl and stir away…

3.  Combine filling ingredients in 10 x 13 inch pan and stir stir stir.  Add the crumble topping over pear and apple mixture.

4. Bake the crumble until  the topping is golden, 40 to 45 minutes.

5. Add some delicious vanilla ice cream of your choice and call it a day.

Simple, easy, and low on calories.  My mom sent me a wonderful magazine with this recipe in it… I just tweaked it a little.  Once I get home from sunfish lake I’ll include a link to the original…You may prefer that one. In the magazine it said it was around 240 calories.  probably not including ice cream though.  Indulge.

Jakeums Birthday Cake

Sorry Ya’ll just had to share this.  I was trying to be all sneaky on Jake’s Birthday and have Rachel help in making him one of her master piece Creato-cakes.  I left quickly before Brunch and we busied ourselves for an hour decorating it.

If a cake could sum up a man I think Rachel achieved it in this one, as she always does.  I played the roll of assistant cake gal  rolling out caramels and tootsie rolls while Rachel sugar sprayed on the Rhymesayers logo (Jake’s job), A bottle of Jameson’s Irish Whiskey (his favorite beverage), a flashlight (because my dorky boyfriend has a loop on his belt for one and is never caught leaving the house without one, White sunglasses (bought these for him at Old Gold in Burlington, he is always wearing them), an I Can Haz CHeezburger cat (responsible for many a laughs), Bacon (no explanation necessary) and of coarse CRIBBAGE (his favorite game.dsc02764

Happy Birthday again Jake Money honey!  It was a blast.  We had brunch at the local, Jake gave a speech, and all were merry!Here are some more gems from the day.

I fell in love with sushi all over again last night.  Jacob took me to Tiger Sushi‘s latest location in Uptown, Minneapolis  on a whim in attempt to actually get out of the house and do something.  I had Tiger Sushi for the first time at the MonaLisa Breast Cancer Benefit, Peep: http://www.themonalisaproject.com.  They catered the art gallery section of the event held by my BFF Emily to benefit her good friend Mona Lisa who was battling breast cancer at the age of 27.  I remember I was starved from working on the set up of the gallery and the silent auction all day so I inhaled the delightful sushi far to quickly to actually appreciate the value of  the heaven in front of me.


So, anyways…back to last night.  On a whim we end up at Tiger sushi in Uptown.  The new location located under the new condos on Lyndale Ave and located across the street from my ever so dreaded previous Bikram Yoga studio.  We parked in the lot fo Egg and I, shhh, don’t tell.  Ran across the frozen dark streets and entered into a beautiful open space to find to my delight, that there was barely anyone there and GASP, it was Happy Hour, at 6:00 no less.  Bravo!!!!

I had planned a Yoga class at 7:30 so we didn’t partake in delicious beverages, wild meals, or dessert.  We did however order Miso soups fit with fried parsley dumplings still crunchy to the bite, 8 pieces of Nigiri Tuna so fresh and red, and a crunchy tuna/salmon roll that was a seriously scrumptious explosion of flavors and comfort.  I have a thing for tuna, can you tell?

The space was nice and open and airy which I love.  There is plenty of room around the bar to watch sushi be prepared, and even an area outside for good eats during the warmer months under the stars or the sun.

I recommend getting in there soon before its the new hot spot so you can enjoy the laxed settings and not have to wait for a table or yum yums.  Next time, no Yoga after…I’m going to indulge my big heart out on delectable eats at my new favorite Sushi Restaurant, Tiger Sushi!
